Here's our fun, quick and nutritious Halloween recipe for our Vegetarian day. It's ideal as a healthy meat-free alternative and is full of protein and fibre. The Quorn nuggets have the same taste and texture of chicken ones and will please children and adults alike. It uses autumn ingredients such as the sweet potato as the earth of the freshly dug grave!



Tombstone Vegetarian Crispy Nuggets in a Halloween Graveyard


It takes 5-10 minutes to prepare and a cooking time of 15 minutes. This dish will serve 3-4 people.


Ingredients

One Sweet Potato (the earth)
A packet of Quorn crispy nuggets (the tombstones)
Spinach (the grass)
Black Food Colouring Pen

Additional ingredients include chopped mushrooms as rocks or stones!


Cooking Instructions

Pre-heat the oven to 200C.

Prepare the sweet potato and cut it into cubes. Boil for 15 minutes.

Cook the crispy nuggets for 15 minutes as per the Quorn packet instructions.

Drain the sweet potato and mash.

Wilt the spinach for 2 minutes in boiling water.

Decorate the Quorn crispy nuggets as tombstones with a food colouring pen. We used black for the RIP lettering.

Layer the wilted spinach (the grass) on a bed of sweet potato (the earth) and put in the crispy nuggets standing up like tombstones. We left one grave without spinach to look like it was freshly dug!
